Red Mullet: I was asked to contribute to the seasonal feature with Olive, which was an honour because I know how much they like to celebrate exciting ingredients. When I was researching, it struck me that the pectoral fin had an almost tulle-like appearance, draped like a veil over a pink petticoat of mermaid scales. It was as if I were looking at a piece of fabric and not an animal, and this is what I sought to convey.
